Travel Tip: Traditional Hessisch cuisine

5 stars
Published on Feb 10, 2008 by annatravel for Hesse

Frankfurt on Main is all modern and fancy, so you won’t bump into national restaurant on every corner there. But in the other smaller towns and villages in Hessen the majority of the restaurants serve German food and Hessen specialities.
My favourite dish in this region is Green Sauce with boiled potatoes and hard boiled eggs. The taste is super fresh and smooth. The sauce is made from minced and an abundant amount of seven fresh herbs namely borage, sorrel, cress, chervil, chives, parsley, and burnet. We also buy this already packed mix in the supermarket and make the dish ourselves. It is very easy and fast.
I think every region in Germany has its own sausage and Hessen is not the exception. They have a very good Frankfurter Sausage, which is made of pork and served in a bun with mustard (you can ask for ketchup as well). You can buy this sausage from small take-away stands and stores in the streets or order in the restaurant with some garnire, like sour cabbage for example.
“Hand cheese with Music” is a strong cheese made with curled milk and marinated in vegetable oil, vinegar, caraway, salt and pepper and sliced onions. This is a good dish for smelly cheese fans. It is served with black bread and butter, which makes the taste of the whole dish mild. The name “with Music” is given to this cheese for the consequences which may come after eating: it influences the stomach in a special way, so one may make “occasional music”, if you know what I mean
