To visit the Quebrada de Humahuaca it was necessary to reach San Salvador de Jujuy, the capital of the province of Jujuy. You can reach the city with a 2 hour flight or on a day long bus ride from Buenos Aires. Distances are rather short and there are no flight services within the province, but it is very easy to move around by bus. The city of San Salvador de Jujuy was founded in the 15th century, and out of the downtown commercial area you can find ancient colonial buildings that still survive. Hotels and restaurants are everywhere and there is one for every budget. Restaurants are generally fancier here than in the rest of the province and some of them are decorated with a local touch. They have a wider variety of dishes and offer the very tasty llama meat in a variety of gourmet preparations as well as more traditional options. There is also a permanent market on the main square which gathers local artisans and is worth taking a look at. They stay open until late at night.
