Société Cheese Cellars in Roquefort
Roquefort is a charming village in the Causses of Aveyron – a hilly plateau in the Midi-Pyrénées Region. Roquefort is of course known the world over for its blue cheese. All of the major producers of Roquefort cheese have cellars that you can visit: where you can see how the cheese is produced and learn some of its history. The Société Company is perhaps the best known producer, and a visit to its cellars is worth a stop if you are in this area. The tour shows how milk from local ewes (female sheep) is collected in vats and then treated with a special mould to give it the recognizable blue-green veins of a mature blue cheese.
